What do i use to get rid of scraches

I have some small short scraches and some big long deep scraches. My boat is prety new and i have time to work on my boat over the winter. How and what to i use to make thos scraches go away. I want my boat to be fast and look the the same way i bought it NEW.

Sort of related question:

When you have a scratch/gouge that is on a part of the hull you cannot get horizontal, how do you put the gel onto/into the scratch (prepared as gov's info) such that it stays in and does not run out and down the hull ?

After last weekend I have a large gouge to get out of the side of a boat (not actually a Laser) and it will not be possible to get the topsides horizontal. Not a collision but a rather "daft" race - the sort of thing where one expects accidents to happen on certain parts of the "course" (the bits where the police have stopped the cars and traffic for you).

I use a gelcoat repair paste - it's not as runny as liquid.
