I just came into a Sunfish. Looks like an AMF '76 from the serial number.
Anyway, on this boat, the sail has a sleeve that pulls over the mast. There isn't a second boom, and the one boom fits into a post on the mast. There's also a traveller on a post mounted in the cockpit as well as some other strange hardware. There are two sets of block and tackle that came with it too, but I don't know if they are both used or if one is a spare.
I can't figure out how to rig the thing. Can someone tell me (or tell me where to look/what to look for?)
What you have there is a Super Sunfish, they were only made a couple of years around the beginning of the Laser. They are fun to sail. Just do a search on Super Sunfish, there is information on how to rig them on line.
A Super Sunfish is a regular Sunfish hull with a different rig, a centerboard close to the new plastic board, and a traveler. You just need the Sunfish rig and a board to have a regular boat.
I looked at the Laser, and there are some similarities to the rigging, (the other block and tackle is probably a boom vang) but the sail has a sunfish on it and it had other features of a sunfish cockpit. Also, the serial number on the back is consistent with a sunfish (AMF35274M76C).
Also, there is an aluminum pole with a traveller mounted across the front of the cockpit (although there is also a cable at the stern that has no obvious use -- its too far from any connector on the boom to be my main sheet).

Talk to the folks at Sunfish Sailors. I recall some discussion between members who sail the Super. They have history info and original manuals you can get a copy of.
