Refinish rudder and Board

I bought a 1973 fish last sailed in 1978 and kept in a garage until I picked it up a few weeks back. The mahogany<?> is in great shape but the finish isn't "Bristol Fashion".

Any advice on sanding,sealing and varnishing? I usually go with a full sanding, sealers and a poly gloss finish but that is for seats, thwarts, and consoles <that hopefully won't be submerged>.

Boat will be used in Salt Water.

Because the blades won't be in the water all that long the basics you mentioned above or in this article should be just fine.
