Oversheeting

I use the following:
Boatspeed relative to those around me - if I slow down while height remains the same, I'm oversheeted
Diag. wrinkle from mast joint to clew - too pronounced indicating too much sheet (after making sure vang and cunningham are correct)

There are others, but all that really matters to me is my speed relative to everyone else
 
In light wind, I generally look at the tell-tale on the leeward side of the sail, about 1/3 up and a few feet aft of the mast as my primary indicator (it should be streaming all the time). Second, I'll look at the leech tell-tale on the top batten (it should be streaming aft).
