Keep an eye on Outer Banks FB/CL. A few cream puffs pop up there periodically from folks who thought they'd do a lot of Sunfish sailing and didn't.

Also give Kirk Newkirk at Key Sailing Pensacola Beach a call, he is/was an LP dealer and may have leads on new, new old stock, or gently used boats.
