Raced rigged sunfish

Sure, there's nothing that makes it harder to sail, in fact with the plastic daggerboard it's actually easier to control. If the rig is set low for racing you can raise it up for daysailing to make it easier to avoid the boom when tacking or gybing.

In addition to what Mike wrote, there is no need for a newbie to adjust the cunningham and outhaul controls (both should be on the boom) while sailing. Just set them according to the conditions prior to taking off, and leave them alone. Instead, focus on keeping the pointy end up, while learning the fundamentals (staying on a course, tacking, jibing, etc).
 
Yeah, there is no problem with learning on a race ready boat. Also if you already have a race ready boat if you chose to start racing you have a boat that is competitive.
