I have found that I am chasing that point where my outside tell tale is flapping, then my inside one is flapping, and then I stall. Is there a "boat set up" that opens up the gruv??

I was having a good look through your different sail settings pages and I found that a lot of the pages didn't work - it came up with some page about server 101 "feel like your in the wrong place". I wasn't sure if that was your site or more likely my laptop. I really interested in the rest of the pages because the ones I have read were a lot of help and made a lot of sense.
