Boat Suggestions

I've researched and researched, and want to get started. I have a long list of dinghys I've been looking at but I'd really like some feedback on something that I can get the kids to enjoy too (so multiple riders).

Requirement:
1. easy to sail
2. can run with 2 people (preferably)
3. recreation only (so a laser not required)
4. easy upkeep, low TCO

I live in a master planned community in Houston, and the local lake has a Sunfish. They used to run 3 boats, last year 1. This year none, due to torn sail on last boat. (I think they also have an Optimist and a Catalina Expo 12.5 in "storage").

Best deal would be to just use the Sunfish, but for <$1000 i'd buy one since they can be sold realtively easy in my parts (Houston/Galveston).


I'm about 5'10" and "athletic" build, kids are <8 YO.
Wife is in the picture too, and she's supportive as long as it doesn't break the bank.

If a Sunfish or Laser will work fine with 2 people, I'll do that. Plenty of resources and abundance of parts.
Due to 2 ppl, would a 420, JY15, Vanguard 15, etc. be better for 2 people?
 
Two on a Sunfish is certainly possible, but I can't recommend sailing a Laser with two adults.
However, the other boats that you mentioned are preferable for double-handed sailing.
