Storing the boat on the water

I think I'd look for a used PWC/Jet-Ski lift. A slide-on or cantilever lift would work great.

    3D Printed Mainsheet Hanger

The hangars go in between the two pulleys. I think the height thing is definitely part of it (combined with halyard position on the upper). If you're 5'6" and running the halyard 74" down the spar (Geezer rig) - it's probably never a problem. If you're 6'2" and running the halyard 54" down...

Trying To Work With an Older Sunfish

I just loosened a couple screws on the side opposite the spring and slipped a piece of nylon twine through and tied a loop.

Even a part at 50% infill is only about 25% stronger than one at 25%, and generally only in compression.

    3D Printed Mainsheet Hanger

The rope loops are almost solid by design, no matter what infill you use. The section for attachment to the spar used cross infill to increase flexibility. Going to 100% solid wouldn't really provide any necessary strength, and almost doubles print time... unless you're planning on using them...

    3D Printed Mainsheet Hanger

Printing orientation was like the far right in photo. Sliced in Cura, printed on Ultimaker 3 extended. 0.15mm resolution 20% infill, Cross infill pattern Support on, line type support, 10% support infill Mine are printed in PLA, which won't hold up long term due to UV/moisture degradation...

    3D Printed Mainsheet Hanger

Went through a few different iterations before coming up with these: Feel free to 3D print your own - https://www.tinkercad.com/things/eKaoziQ5CJy?sharecode=48mEyepkg5dYjIK6pcmqfP_h4HTakUq-BaNgdkCZbb0

    Drain plugs?

It's an extra .10 if you have a local hardware store with a good selection of O-rings sold in singles... free if you have an O-ring sitting around like I did. ...but you're probably looking at $5-$10 if you have to order it.

    Drain plugs?

Yes... The thing is - even without the O-ring you could submerge the drain and water will come through the bolt threads at about an ounce every few hours. Under normal sailing conditions - the O-ring does basically nothing, because the bolt by itself will stop 99.99% of the water.

    Sunfish Cover

Couple loops on the underside of your fiberglass piece at the front & rear of the cokpit. Bungies tied to the loops with hooks/clips on the other end. Clip the hook/clips to hiking strap attachment points.

    Drain plugs?

I did also... but I have no idea what the o-ring is, and I don't think it's all that necessary.

    Drain plugs?

I have 1" - but either would work. I just got 1" because I found a 20 pack on eBay for a couple dollars.

    Drain plugs?

The thread is 1/2"-13tpi. I use a 1/2"-13 x 1" nylon hex bolt. I have a bunch extra and would offer to ship you one, but shipping would cost more than you could just buy one for. https://www.zoro.com/zoro-select-12-13-not-graded-hex-head-cap-screw-nylon-5-pk-350013100/i/G1554122/
