good cardio workout

The best cardio training for sailing is sailing in a breeze.

After that, I would say the second best is cycling, which works similar muscles to hiking and gives a good cardio workout.

My third choice is indoor rowing - again good cardio, and also helps both upper and lower body sailing strength. Some of the top olympic sailing teams in the world (AUS and GBR among others) use indoor rowing to benchmark and improve sailing fitness.
 
Another vote for cycling. Or indoor spinning classes if you need the motivation to get you working hard on the bike.

Personally get bored stiff on the rowers so don't use them although the top guys do. Concept 2 have also produced a book with specific rowing exercises/programmes for laser sailing. They were giving them away at the RYA Dinghy show this year so may well give you one if you contact them to ask.
 
Another one for cycling, when not on the boat.

Glen Bourke one of the previous would multiple champions, was an A grade rider and could have gone pro had he wished, supposidely.
