Looking through the above photos, it appears the Sunfish sail is an easy swap, but you'll lose 10 square feet of sail area. The rudder and transom fittings look like they won't work. The daggerboard is similar, but would require a test-fitting to know for sure: even Sunfish has experimented with different daggerboard shapes.
The Dolphin SR appears like a competent design, perhaps borrowing from Super Porpoise expertise. I'd ask what kind of bailer does it have, and what does the Dolphin SR forward hatch (if you have one) lead to?
