I made myself a new rudder a few years back when my old one broke. I just used an offcut of 18mm marine ply. Did all the shaping by hand and it worked a treat.

So far this summer I'm sailing every week. Mostly in the evenings after work. I even got to do a proper night sail at the last full moon.
Glad you managed to stay dry but I would echo what others are saying here. Capsizing is a core aspect of learning to sail. You should do it a lot and become comfortable with getting your boat back up and getting back in. Pretty easy with a sunfish. Kayak backup sounds like a good plan!
