Fastest way to sail downwind on flat water

What is the fastest way to sail downwind on flat waterways, I don't know whether s turns are legal but I am guessing not, I usually make the biggest gains downwind but I just seem to have very slow downwind legs, any tips on how to be quicker?
 
In flat water, (no surfable waves) sail by the lee with your weight by the centerboard with some windward heel. Up in the lulls and down in the puffs. Make sure you're vang is not too loose, main all the way out to the 90 degree line, (not past 90 degrees!) outhaul to max out setting and Cunningham off. Board about 25% up and no more than 50% up.

When in planing conditions, something you can do to save drag is slide back and pump the sail as a gust hits. Then, once the bow is out and the boat is stable and planing, slide a little bit further forward. This allows the boat to continue planing without dragging the transom as deeply in the water. You don't need a sky-high bow in the flat stuff.
